Ginger molasses cookies provide a wonderful base cookie for lots of different flavor combinations. Here’s a recipe that takes the ginger cookies to scrumptious new heights with the addition of sweet, chewy figs.  So many that they’re located in each and every mouthful.

Typically, ginger cookies tend to be crisp and “snap” when bitten or broken , hence the name “gingersnaps.” But not everyone likes a crisp cookie.  These cookies were developed to delight the chewy-cookie enthusiasts out there.  They provide the quintessential mix of a crispy exterior and moist, chewy inside.

Regardless whether you opt for golden, Calimyrna Figs with their nutty flavor  or the sweet and dark purple, Mission Figs – or a mix of the two – this Chewy Ginger Molasses Fig Cookie may just end up being a family-favorite.

Figs make these ginger cookies sing with flavor!
Ingredients
  • ⅔ c light brown sugar, packed
  • ½ c vegetable oil
  • 1 large egg white
  • 3 Tbls light molasses
  • 1-1/2 c all-purpose flour
  • 1-1/2 tsp ginger, ground
  • 1-1/2 tsp baking soda
  • ½ tsp cinnamon, ground
  • ⅛ tsp salt
  • 1 c Blue Ribbon Orchard Choice or Sun-Maid Figs, stemmed and finely chopped
  • ⅓ c granulated sugar

Instructions
  1. Preheat Oven to 350° F
  2. In a large bowl, beat brown sugar and oil with electric mixer on medium speed until blended. Beat in egg white and molasses.
  3. In separate bowl, combine flour, ginger, soda, cinnamon and salt. On low speed, slowly beat in flour mixture until combined.
  4. With spoon, stir in figs.
  5. Roll dough into balls (approx 1 Tbl each). Roll balls in granulated sugar. Place 2½ inches apart on ungreased cookie sheet.
  6. Bake 7 to 9 minutes or until cookies are cracked on top and set around edges.
  7. Cool on wire rack.
  8. Makes about 30 cookies.
